Other Information:  Authentic saffron is the stigmas (female part) of the Crocus flower only.  There are 3 stigmas joined by a single filament called a "style" in each flower.  The "style" is worthless.  The main factors in determining quality saffron are coloring power, aroma, and flavor.  It takes more than 170,000 flowers to product just one kilogram of saffron.  Why is there such price fluctuations in saffron? Some saffron is made less expensive by adulterating the stigmas with floral waste.  The waste is styles and stamens (male part) dyed red.  These parts of the flower have no aroma or flavor.  There can be between 15% and 40% floral waste in adulterated saffron.
Usage:  Recipes for Saffron      To steep saffron: rub the threads between your fingers, the place them in a small amount of warm liquid for about 20 minutes.  During steeping the liquid will turn yellow, a sign it's being infused with the saffron flavor and color.  Then add the liquid and threads directly to your recipe.
